Meeting with Chef Joseph Yoon
May. 12, 2024The class BIOL 140: Exploring a Sustainable Future recently discussed climate change and sustainable agriculture – and sampled cricket chocolate brownies – with world-renowned chef Joseph Yoon. During his visit, which was funded by the Lawrence H. Roys Endowment, Chef Yoon shared how to embrace insects as a vital part of our eco-friendly food system. He will give another talk and prepare tasting samples on Monday, May 13, as part of the Roys Lecture Series.
